I too had the same issues with tvheadend and the TV HAT crashing. I tried the kernel8.img *hack* but that seemed to cause other issues.So in desperation or at least for a laugh I installed *snap* and then installed the snap version of tvheadend.
The kernel8.img hack is no longer required - the fix should be in apt (kernel 6.6.31 from apt has the fix).

Are you testing on Pi5? The issue is an intermittent failure (I would see it about once a day, although it depends how heavily loaded the Pi is).
I suspect the change to snap package of tvheadend hasn't fixed the underlying issue ("spi_master spi0: RX FIFO overflow detected" in dmesg).
